MAPLE BOURBON CHICKEN & VEGGIES

Ingredients

3 Tbsp. Fresh Harvest Garlic Olive Oil, divided
2 boneless skinless chicken breasts, cubed
1 Tbsp. Onion Garlic & Herb Seasoning
1 tsp. Sunset Seasoned Salt
1 tsp. Sunset Seasoned Pepper (Retired)
¾ cup Maple Bourbon Apricot Glaze (Retired)
3 cups assorted vegetables cubed or sliced (carrots, celery, cauliflower, broccoli, red pepper)
4 cups cooked rice

Instructions

In large skillet, heat 2 tablespoons Fresh Harvest Garlic Olive Oil over medium-high heat. Add chicken and seasonings. Sauté until chicken is cooked through, about 5-6 minutes, add Maple Bourbon Apricot Glaze (Retired) and simmer on low for 10-15 minutes. In another pan add 1 tablespoon Fresh Harvest Garlic Olive Oil and stir-fry vegetables until tender crisp. Add to pan with the chicken and stir for a couple of minutes. Serve over rice.
